The Shelter In Place Salad

Reduce your trips to the supermarket, eat better, feel better, and save money, all at the same time? By Jamie Creskey Yes, having an unlimited production of greens in your own home can help you eat healthier, and dramatically reduce the number of trips to the grocery store. Here's a a key point about micro greens that is not widely known:  They can provide all the micro nutrients that your body needs, even if you don't have access to fresh vegetables.  In fact, micro greens contain up to 50x the micro nutrients of mature vegetables. Follow these 4 tips to get great harvests of parsley, year round!

  1. Use an LED grow light with enhanced blue spectrum, which improves vegetative growth, perfect for crops like herbs, leafy greens and micro greens. 2. Use an automatic watering system to ensure consistent moisture, and fertilize your planting on a weekly basis.3. Use a strong-growing and bolt-resistant variety, which will provide multiple cuttings for months on end. The variety I use is Green Pearl Organic, available from William Dam Seeds.4. Use a full-size tray, and plant thick. Parsley tolerates a high density of plants, and a thick seeding on a large tray will provide high yields. Most importantly, broccoli micro greens have been shown to have up to 20 to 50 times  as much sulphoraphane as mature broccoli.  And by growing your own, you eliminate the pesticides, which are a concern with conventionally-grown broccoli. Regular consumption of broccoli micro greens, is probably one of the best things you can do for your health.  And, oh my, do they taste divine! Did...
